A new menu item is set to make its debut at Bierock.
Joining the already stellar lineup of food will be the Tailgate Bierock, available only on Wisconsin Badgers and Green Bay Packers game days.
The Tailgate option is stuffed with bratwurst, cheese curds and sauerkraut, seasoned with caraway and like all bierocks on the menu, it will be wrapped in a made-from-scratch dough.
As a nod to Bierock’s Northside roots, the bratwurst will come from Jim’s Meat Market via Capitol Centre Market. The cheesecurds, meanwhile, are from Carr Valley Cheese in Middleton.
Jim’s Meat Market recently closed its Northport Drive location when its lease ended after Kwik Trip took over the PDQ convenience store chain where Jim’s was located.
Thanks to former owner John Lehman, however, Jim’s Meat Market brats still live on at Capitol Centre Market in Madison.
Served on the side will be a green-and-gold combination of sweet pickles and yellow mustard.
The Tailgate Bierock was developed by executive chef Sandra Montello.
“Our tailgate bierock is the perfect complement to the unique game day environment at our bar and pairs well with so many of our craft beers,” said Montello.
The Tailgate Bierock will be served for the first time at Bierock’s Packer Fest on Saturday Aug. 25 and then on every Packers and Badgers football game days for the remainder of the season.
